Jabber or Openfire
Well, in my experience I have used Openfire and Jabber (via ebox). Both are easy to install and use. Ebox is a bit harder, but if you don't already have a server with SSO, it is the best option in my opinion. I have scaled both at companies with ~200 employees.
Word of warning though, I only use communications internally, have not tried to connect either solution via Internet (only as corporate intranet), though it is possible.
For the client, I find Pandion works best on XP clients, if you do not need other protocols as MSN, Yahoo, etc. -

If someone packages a solution where you can get a file, print, ldap and policy handling up and running without much fuss i think Linux would explode

You might also want to have a look at eBox Platform. That's FOSS, works out the box and provides what you want (doesn't seem to be any Group Policy yet though).

Ubuntu server is going to start using eBox "Really Soon Now"^tm. This will be great for new admins and small businesses. It's really easy to set up LDAP / Samba / Mail / Jabber and pretty much anything else SMBs need with a nice clicky interface.
Know any other easy way to do LDAP on Linux, short of spending large cash? Doing it myself (especially with OpenLDAP) caused lesions in my brain last time. Think of the children!
Seriously, though, eBox (and by extension, Ubuntu Server 8.10) looks slick for the market it was designed for.
