ok Protools is god... period, i am an audio tech, and well it is coming close to the standard in ALL recording, period.
Digidesign (the owner of protools) has a nice little into bundle (PCI Card w/ out board (OB) interface) bundled with prottols 5.1(i think) LE, problem is its @ $800. BUT it does have 8 analog I/O (w/ 2 !nice! Preamps & 6 line in) 8 chanels of ADAT otical(i doubt you even need that) and 2 S/PDIF I/O all digital @ 24 bit REz. Also has a 1in 1 out MIDI interface. 3 additional seperate outputs are a stero monitor / headphone w/ volume (IE no mixer neaded!) downside is this bundle does NOT include any REAL plugins(DSP) (however this bundle does @ $1.2K)
If you want an alternative MOTU (Mark of the Unicorn) has a Firewire based OB unit, but its not protools and i have never used it, and its only a couple dollars less,
If you really want to hold out for $500 dollars, you are going to have to go consumer grade, all of these are basically pro grade (motu is, 001 is mighty close). and with consumer grad you are not going to get the same quality/support as you woould with either of these companies

Re:I want multiple tracks!Thank you for the quick reply and links. I must admit that I did a bit of drooling when I read the specs on those devices. They're all more expensive than what I can afford, but I actually expected them to cost much more. The Roland unit, for example, does a lot for just $700. (Did I understand correctly that it writes 24 simultaneous tracks to the hard drive? If so, that's really cool.)
I read the FAQ on the Tascam unit and they say USB can handle 6 channels, though not at 96kbps. That's a pretty low ceiling for any semi-serious musician, but for me, it's plenty. It would be great to just find a box with 6 XLR inputs and a USB plug. That sort of thing could be dirt cheap if you used shielded "consumer" A/D converters like on a high-end Sound Blaster. It would also be tons of fun to play with.

cool musical giftsOk, so the ol' Sarge is into guitars this year, and he's got a couple of ideas. The first one is the coolest portable I've seen, and it is gadgety enough for any geek musician. Check out the Traveller Guitar. It runs $380, and has a full size fretboard but is only 28 inches long. Has both magnetic and piezo pickups with individual volume controls.
You can listen to it through the included stethescope headphones, but what you really need is this slick little amp from Danelectro (I have one, and it sounds pretty amazing for it's size), about $30.
Now if you wanna play, but have no patience, here is a cool thing I saw in the store the other day, called the Strumstick. It is essentially a 3 string dulcimer, designed to be so easy to play that anyone can pick it up and start playing. I tried one out, and it was pretty magical how you could get decent tunes out of it with no practice or lessons. Goes for around $100, a little more if you want fancy inlays around the soundhole.
So your friends are even less talented, you can always buy them pre-played music. But in light of the way the big labels are holding the money while the artists fight for every penny, why not check out the little guys? Rather than buy commercial CDs for your friends, how about checking out some of the fine talent on mp3.com or other online places. You can buy CDs for between $5 and $10 that have both CD audio and mp3 versions of the songs. Makes for good gifts, and is a good way to promote little known, but talented musicians (the artists get 50% of the purchase price, a pretty good deal).
