I couldn't agree more. The freshest sushi I've had was at the Hotel Okura in Tokyo. I witnessed a very fresh and very live prawn (ebi) being plucked from a bucket, its head snapped off, shelled, sliced in half and gutted before being served to me on a block of rice. This all happened in the space of about...er...1 minute. The prawn meat was still twitching when I put in my mouth....
