I would definitely check out the different open textbook platforms out there, some of which were mentioned above, such as the CK-12 Foundation. One model you might look at is the open textbook "Collaborative Statistics" that is published on the Connexions website (http://cnx.org). I interviewed Susan Dean and Barbara Illowsky last year, and they talk about what they went through in terms of publishing logistics and also the professional and academic results of publishing openly.
