As a native of NC now living off the Yuc. Peninsula in Mexico, A/c is a luxury but not a necessity. Nearly all homes and most businesses are non A/c here. For heaven's sake, think of all those people in Africa and desert locations!
Re refrigeration, while still not the total most-important-invention-in-the-world (especially down here, where there *still is* a butcher, baker, and tortilleria on every corner) anyone who has lived for over 2 days with an ice cooler can tell you it makes life a lot easier!
