I agree with everyone on the "models vs. digital" argument, but I have to raise an issue with the "old looking vs. new looking" argument. Think about the situations you're dealing with. In the first trilogy (4-6) you were dealing with a group of rebels and pirates who barely had the time and equipment to keep their ships working. Washing and waxing was out of the question. In episode one your dealing with ships owned by royalty (the Queen's cruiser), by the Jedi's at the height of their power, or by the Trade Federation, the richest most powerful organization in the Republic. Of course the ships are going to look newer and nicer.
