Instead of building a cabinet with a computer you are going to have to build one with a wii, ps3 or 360 in it with enough ventilation perhaps all 3 and if you really want to go the full mile and rip them out of their cases you can mount the optical drives so you can still use them with out opening the side of the cabinet...
Then you can play what ever roms Nintendo, Sony or Microsoft port over. It would not be too hard to make a switch to allow you to use the arcade pad on all 3 consoles...
