Set up 16 VM's with extremely stripped down XP running on each, with only one USB-ethernet adaptor assigned to each VM
Instead, get 8 cheap laptops, and set them up to do the same thing. As others said it may only be a serial interface rather than an actual network port and you don't want broken pumps.
