Eye tracking tends to be much more complex,difficult to use and expensive. Systems typically sell for over 10K$. I've used both eye and head tracking and head tracking is far more intuitive.
You don't click by blinking. You can use a hotkey, the mouse button, an external switch or dwell based clicking where if the cursor rests on an object for a definable time it clicks. You can also define a hot key that must be pressed to move the cursor.

You can set it up to only move the cursor when you press a hot key.
Sensitivity is adjustable to a pretty high level. It really requires no more movement than normal looking at the screen.
