I would have to agree with this analysis of Copyright.
Further since copyright is a tort, (in Australia and England at least) unconscionable conduct at the start of a degree by a University to deprive a student of their IP rights would make any agreement null and void. The level of compensation of the student and the knowledge of what they may be signing away would be looked at by a court and any unilateral agreement assigning IP to obtain a degree / diploma would in my opinion be set aside by a court.
