We are doing this right now at the University I work at. We are using Windows Terminal Services for W2K. You can use Rdesktop (rdesktop.org) to connect from a linux box, or the client is free from MS.
For Terminals, the best bang:buck ratio we found was from Wyse. Apparently the XP version of Terminal Services even allows local drive mapping.
Even works decent for allowing offsite access to your lab software over a 56k or better connection.
