I agree, whats the difference between that, and just backing up your data, and if you use some thing like mondo ( Mondo ) you can restore data over NFS, and on a gigabit connection, is there really that big a difference from roll back ? other than a little time, but overall, i think that using VMware for security is backwards... wait until you get hacked to figure it out ? hmmm...
