AT&T nee SBC nee Ameritech nee Illinois Bell is - the last time I looked - paying more than one million dollars a day in fines. I guess it's just the price of doing businesses.

IMHO, take as many classes OUTSIDE of CS as you can. A well rounded education means that you will have a better appreciation of someone else's viewpoint. For instance, if you know something about manufacturing or retail then that should translate to actually solving a problem. Employeers like a CS grad who 'speaks their language'.
How about offering a class on computer self-defense? How to set-up a firewall, the importance of keeping your favorite anti-virus up to date, how to document your browser and e-mail client settings, for instance.
As for frills - how about an introduction to eBay - might as well let them earn while they learn:)
How about MTBF? traditional hard Drives have only so long to live before they die. SSD should - in theory - last longer.
