In his defense, I believe he tries to explain what transpires when cooking in a scientific, or at least academic manner to your everyday Joe Sixpack and Jane Housecoat.
But remember, he went to to the New England Culinary Institute, not MIT. He's a chef, not a scientist. Or culinary anthropoligist.
