William Zinsser wrote a book called "Writing to Learn" devoted to teaching Students To write effectively across many different fields. He approached professors from many disciplines and asked for their suggestions as to great examples of writing in their respective specialties. He also talks about a program called "writing across the curriculum." The books sounds exactly like what you are looking for.

Zig Ziglar wrote a book about this very topic. Sorry but I am not at home just now to check the title. It was full of good writing examples from many different fields of science. One I remember off the top of my head was "Silent Spring." I'll try to find the name of the book and post it later.
