From my experience postfix scales the best for sending and receiving email. Use postfix+(mysql or ldap) + amavisd-new + clamav (or some proprietary alternernative) + spamassassin. Cyrus is probably the best for pop and imap access. Squirrelmail for webmail.
TrendMicro has a product that is an email gateway as well as an http proxy type thing and an ftp proxy type thing. These could help you keep the students from getting any viruses by making all students go through these gateways.

I understood the rant to mean that the ISP had been hacked for 5 months and someone logged in from that trojaned ssh client on the ISP to get the passwds for SF. Maybe I misread it, but I would tend to think that it would go un-noticed in an ISP way longer than it would go un-noticed at VA. Maybe I give VA too much credit
