I think this would be a great group project. You can count me in, although I admit I not that electronically inclined. However, I am pretty good in Java. You should check Dallas Semiconductors, they have a alpha product called TINI which looks like a good direction for the project.
Having to put a keyboard in a fridge would probably be a waste of space. I'm not saying that having a touch pad is any better, but if anybody is going to have to do a serious amount of typing, they should probably hit their closest terminal.

Actually a better way of doing it or a complement to the bar code reader would be voice recognition.
