My Intel Mac Mini dual boots to Ubuntu's Edgy by default (on the HD). OS X is the 2nd OS on the box, the one I run every now and then. If you look at the menu system systems and layout between Ubuntu's Edgy and Mac OS X, you see a ton of similar features. The UI polish and consistency across applications is there yet, but these systems are far more alike than different.
I haven't seen Vista, but the guy at my local computer store said that compbiz running on opengl Linux made Vista look like a turd.
