First of all... the iPhone IS special. What it is doing in this app and in the link I'll provide below for jailbroken phones is not something lots of phones can do, if any others.
Second of all, this app was NOT a tethering app. AS you say, tethering is done by either BlueTooth or USB cable. What this app did is create an access point by sharing the cellular network over wifi. You don't "tether" your laptop to a wireless router, do you? Now that we're clear on that, I guess we have to live with everyone calling it tethering.

I don't know if the iPhone acts as a Wi-Fi modem,
It doesn't have any provision, in the built-in software, for acting as a router for either of its network interfaces (Wi-Fi or EDGE). There is an iPhone port of srelay, a SOCKS relay, although I don't know whether any OSes offer completely transparent SOCKS access (e.g., some way of intercepting all IP-layer network accesses and SOCKSifying them).

Do you mean "EDGE modem"? Or are you talking about laptops without built-in Wi-Fi interfaces?

Do advertisements "know" when they are adblocked?
I didn't think so. I mean, the main host doesn't know when a request is made from your browser to the ad-server, and the ad-server obviously doesn't know that a connection was NOT made to it just now.
Nonetheless, this site seems to know that their google ads have been blocked.
With Adblock Plus active, in place of the ads, they put an image with "Thank you! For blocking our ads!".
I haven't researched whether Adblock or Firefox somehow divulges information that make them able to tell the blockers and the rest apart, or if there is any serverside trickery they're doing. Anyone knows this?
Anyway, as the site is awesome I unblocked them :)
On there and on natetrue.com you can check out lots of hacking in the broadest sense of the word, BTW. Well worth a visit.
