Folders? Bleh...
I don't "get" the concept of sorting music in folders.
If I want to listen to "Jam" by "Michael Jackson", I can't necessarily remember which one of his 10 albums it's on.
Therefore I have all my music "sorted" in one huge folder.
This obviously requires utterly perfect file naming, but that requirement is trivial with proper tags (which is the real hurdle) and a good file renamer.For albums I use: "Artist - Album - Track # - Track name"
For compilations it's: "Album - Track # - Artist - Track name"This way the tracks are always sorted in the folder in the order they are on the album. In actual use, this method is far superior to the folder-concept due it being easier to spot the correct artist name and there being no frantic movement through subfolders.
In order to achieve the above i use:
Max for ripping
Media Rage for retagging/renaming/etc.
iTunes for retagging/playing.On Windows I would use EAC, Tag (although with the "Tagger" frontend) and Foobar2000.

Despite your repetitions of it, I'm afraid I can't explain why you're the only person in the world for whom itunes does not offer cddb support. Perhaps it doesn't like you; I have to admit that I'm kind of starting to not. ...
Okay, so even if you have the world's only copy of itunes that mysteriously does not act as a cddb client, enter the artist and album tags into the id3 tags (via itunes or any other tool you like), and it'll propagate that to filenames and directory structure for you. ...and I had to manually enter the artist and album tags.Or, as many other people have suggested, if you've already made the odd choice to manually enter this data as filenames and directory structure but not id3 tags, you can use either your own or someone else's tools to propagate that information in the other direction.

Re:Flac for sure
Yeah, FLAC stores metadata, using Vorbis comments. There's various tagging programs that'll happily deal with FLACs, such as mp3tag for Windows or Media Rage for Macs. Finding Linux/BSD software to do it shouldn't be a problem, of course

Re:Cute forced upgrade trickery
Or you could just get Rendezvous Beacon for the Mac, which lets you pass Rendezvous traffic across the Internet. A workaround using it came out within a day or two of iTunes 4.0.1 (if it even took that long).
Googling for the howto is left as an exercise for the reader. -
Use MP3 Rage
MP3 Rage will allow you to not only get info from CDDB for already ripped MP3s, but handle all sorts of other tagging and renaming. Check it out
