Apple effectively has 4 products. iPods, iPhones, iPads, and laptop/desktops.
You forgot about iTunes, which is estimated to have generated a revenue of $1.8 Billion in 2009. Sure the total revenue may not be as large as total hardware revenue, but it's not chump change either.

1. Because those are most certainly unique visitors per month so deleting old users does jack shit for the numbers.
2. As someone else pointed out gmail is very much a new player and people don't like switching email addresses as a rule.
3. Most anyone who isn't an old fart, see 2, is using gmail.
4. Gmail is gaining users very quickly, see 3, while everyone else is at best staying constant.
5. The people in those other companies know this and have great fun laughing, and cringing, whenever their CEOs mention how "fantastic" their webmail is doing. -

The migration to IIS was completed a decade ago. They hit bumps like any migration, but they got it done. All free mail services delete your account if you don't access within a couple of monthis (including gmail). Yes, there are a number of reasons why this could reasonably be the case, particularly though we've had a couple of years of slow economic activity which has certainly had an effect on corporate upgrade cycles
The economy has had less of an effect on some computer companies than others. In fact, some computer companies with the ticker AAPL have enjoyed massive GROWTH, despite the economy, which others, with the ticker MSFT have had to write off entire products, to the tune of hundreds of millions after just six weeks on the market.
Guess that's why Monkey-Boy got a pay cut, eh?

I think they make some gravy with the app store, but the average iPhone user buys $80 worth of apps. Maybe the iPad will be a bit higher, and maybe these numbers are a bit off, but right now Apple is only skimming an additional 30% * $80 = $24. Not exactly a slam dunk

Many app-store games are former flash website games too...
