Get an old computer
Not to be insensitive or facitious, but why not get an old computer? A machine thats a couple years old already has spent plenty of time baking off residual solvent vapors and other chemicals. You might want to crack it open and remove all the dust on the inside first, though
;-).
If you insist on modern hardware, have a look at some of the ruggedized equipmnent that is designed for industrial use (note this shit's not cheap):
environmentally sealed NEMA 4/4x stainless steel/ABS plastic keyboards
waterproof/contamination proof silicon keyboard with integrated pointing device, that can be chemically sterilized -

Backlit illuminated keyboards of the type you mentioned have been available for some time now. They are generally used in medical/industrial applications. And they are very pricey. Look here.

If you're making a digital sign or a wall mounted kiosk in a mall, you could literally screw this little beast to the back of the unit (or inside) and no one would ever know it's there.
The size does make all the difference in the world when you want the computer out of sight/out of mind and space is a luxury you don't have.
It doesn't appear this device was ever meant for home use or a replacement for blade servers. -

It'd look like this or this or this. There are loads of these things, and everyone who makes them thinks they are hot stuff. Thay ain't that cheap, though.
You can get regular rackmount monitors too. (and TFT ones of those).
