Seriously, you don't need sendmail to send out your email. That's what mail.app is for. Well, if you're not spammer, that is.
Sendmail would mostly be used in conjunction with Mail.app. For SMTP server you would fill in "localhost" and be set sending out email wherever you are.

I've been using Postfix for years but if you think I'm looking forward to hearing about 'The Mac's great new mailer' from possibly well meaning but over enthusiastic Mac zealots in every SMTP discussion.... Just pass me the fucking gun now ok!
