Video-In Solutions for Linux?

Greyfox asks: "I would like to set my Linux box up with a webcam-like video-in solution. I need something with reasonably high (At least 640x480x8bpp) resolution and a well documented video stream. Proprietary hardware or compression is right out. Any suggestions as to hardware I should look at? "
