Complaining that a CS degree doesn't help you program is like complaining that a history degree doesn't help you with your office clerk job. Computer science can be done without a computer. Universities aren't vocational schools. I would go so far as to say that if you can't program at some level by the time you begin a CS program you shouldn't be a programmer anyways.
CompUSA does carry FreeBSD. They sell the FreeBSD PowerPak which includes FreeBSD, the Complete FreeBSD, and the FreeBSD Toolkit. They weren't available for very long after they first started carrying it and I haven't seen it since. I talked to jkh about it and he seems to think they are just sold out but that they had ordered more.

University of Illinois at Chicago actually has Bioinformatics programs and their curriculum is available on their website.
