Try to estimate the number of instructions executed during a 20 day period. First on your desktop machine pushed to the maximum of it's capability. Second on your 8-way server pushed to the maximum of it's capability.
If the numbers you find are proportionnal to your uptimes it might explain the stability difference that you are experiencing between desktop and server end machines.
I don't know enough about CPU's and the SMP architecture to give you even a rough estimate.
