First institute a ticketing system so you can measure how long tasks are taking and the volume of work put on the existing staff.
Then as volume of work grows beyond the capability of the existing staff, the company will eventually have to hire new employees to help with the load. *That* is the time to document processes, for "training purposes". Promote the existing know-it-all to support manager and have him manage the n00bs and have him create documentation for them to follow.
If he can figure out the right permutation to absorb radar or have radar waves cancel themselves out, then the military may be interested.
