The Bard's Tale series was excellent and I'd love to see it remade. The riddles, puzzles, and mazes made it challenging over and above just fighting monsters.
I also liked Neuromancer on the Commodore and thought it was a pretty good adaptation from the novel at the time. I think it could be remade to be much better in this day and age though.
