From what I understand, the number mapping between switching centers determines the "portability" of your number. Your cell phone actually has two numbers. The first number is the "alias" number that people call. The second number is the "real" number assigned to your phone by your service provider. Both numbers have to be within a certain call center radius in order for the mapping to work.
When you port a number, the system is essentially mapping your alias number to a different mapped number.
