Having recently tried this myself, I can say that it does mostly work. The one major issue that I found with it is that drop down lists will not drop down. You can scroll through the options, but that would likely be confusing for some.
My solution was to install FVWM and modify it's configuration to not have any title bars, menus, etc. available to the end user and to start Firefox full screen. Seems to work pretty well.
