But for cows it has a lot of calories as they can actually digest it. However: humans who got contaminated with the same gut bacteria as those cows: can digest fibers, too! Hence something that has 500cal on paper (for humans) suddenly has 1500 cals for humans who are "infected" by cow gut bacteria. That converts a healthy broccoli into a cal bomb.
