I think that the big draw for this will be playing movies with the TV out. Imagine having a "VCR" that fits in your palm. I know watching a movie on a two inch screen would be really boring, but being able to bring the latest episode of SeaLab from your Tivo to a friend's house, or coming over to your parents house with a video of the kids would be great.
If apple is adding color screens I don't see why they wouldn't at least support.mov files. Doing so would integrate the iPod with iTunes, iPhoto, iMovie, Garage Band, and iCal....now if they'd only add WiFi and a two minute buffer I could listen to net radio all day:)
