Pussycats of the sea
Stingrays are generally non-aggressive and intelligent creatures. They have been called the "pussycat of the sea,"
Something I can attest to first-hand. The Monterey Bay Aquarium has an exhibit where you can pet bat rays.
I know Irwin has a lot of fans. But I always found his personality very hard to take. The fact that he managed to get himself killed by such an inoffensive creature does little to raise my opinion of him.

You're right, as far as tuna-family fish go at least.
It's been well-studied that some of the larger species of tuna direct blood that's been heated by the action of their largest swimming muscles to their brain... which helps keep their super-fast twitch-reactions humming. Swordfish use the warm blood to improve their eyesight.
Mind you, these are some enormous fish.

good stuff at Monterey Bay Aquarium
If you're interested in seeing more bizarre sea creatures, check out the Monterey Bay Aquarium's Deep Sea exhibit. My favorite: "In some species of anglerfish, the males are tiny, with simplified body features, and they live as parasites on the females." Heh, heh.

Many deep sea creatures don't actually require a pressurized environment. They can life at surface pressure. But they tend to be very sensitive to temp (need cold), light (its dark down there), and oxygen level.

Seriously, if I could afford to create such an environment and the equipment needed to get the fishes from the ocean and into it (which to the best of my knowledge noone has ever done)
On the contrary, the Monterey Bay Aquarium has quite a few deep sea creatures in pressurised tanks/displays. I don't know how they clean them though.

On the contrary, the Monterey Bay Aquarium has quite a few deep sea creatures in pressurised tanks/displays. I don't know how they clean them though.

I was lucky enough to be the geek to program the control system for Monterey Bay Aquarium's deep link exhibit.
Sitting in that theater for days on end, tweaking my code so things would run just right, and watching the live video feed coming in off the submersibles. VERY COOL!
One of the days I was up there, I chanced to watch them run into (literally) into this strange critter that looked like a long string of translucent beads - each bead about the size of your fist with a large red nucleus. After a minute or so of looking at it draped across the sub, they backed the sub up, and tried to look over the thing, but it drobbed to the depths before they could see much of it.
Kinda curious, I leaned over to the marine biologist who was troubleshooting our microwave feed and asked him what it was... well, he was already staring at the screen slackjawed and muttered "I, I, I dunno..." -
