If you have money to throw at it...
Check out NetBotz products (now owned by APC). They do full environmental monitoring (watch temperature, humidity, airflow, and listen for noises like alarms, etc). They also have water detectors, and can even be set up to control contacts which you can feed into relays to trigger stuff (lights, pumps, HVAC, etc). They also have cameras which are capable of detecting motion and e-mailing you the first x seconds of video after motion is detected. They are primarily intended for data centers, but I don't see why they wouldn't work in this case as well if you have the money to spend.

Netbotz w/ Fluid sensor
The Netbotz unit (a 320 would do) with a fluid sensor on the floor would monitor your house's temperature, humidity, and air speed as well as provide a door contact switch and sense water on the floor. Units with and without cameras are available. A multifloor dwelling would be a bigger challenge, of course. http://www.netbotz.com/

Netbotz monitoring appliances
We use Netbotz http://www.netbotz.com/ monitoring appliances for our server rooms, both the main datacenter and the alternate. We get SMTP mail, pagers, and cells...and the system has SNMP MIBs, so you can get MRTG graphs of the temperature, humidity and all enviromental variables.
You can get models with cameras, motion detectors, etc. -

not the first and will not be the lastThere are plenty of network appliances out there that do temperature, netbotz for one.
Question is: why a dedicated stat (thermostat) when for the same price range several devices can be connected to a controller that is connected to ethernet?

Don't forget WallBotz, expecially the new 500 series. It can support over 10 cameras and remote sensors, so you can monitor the whole room with only one box.

Depends on your budget
NetBotz are the best-known and most fully-featured system, but they're kind of pricey.
A cheaper alternative is APC's solution while providing just the environment info you want.
If you are also looking into remote power management, Server Technology's Power Tower product is being integrated with a new environmental device (for $100-200 or so, according to reports) which allows you to keep your interactions and monitoring all on one interface for environmental and power both. -

I think Netbotz are the best I've seen so far. I have used them in multiple server rooms for security as well as monitoring. They have temp, humidity, a camera, and are web-enabled. Very sweet!
