OpenERP for the POS option: http://www.openerp.com/products/pos OpenERP has built in inventory and all the financial accounting plus management drill-down 'dashboard' (so you as the owner can monitor the business "what are sales today?" "Ok" "what are sales of chicken platters today?" "hey, that's nice"). An average technical person can install this on an older pc you might already have and be up and running pretty quick.
gnu cash as noted - real accounting package. Think 'peachtree' not 'quickbooks'. http://gnucash.org/

You'll get nailed by MS Sql server on price
Microsoft SQL server is a fine product but like Oracle gets real expensive real fast...
OpenBravo POS and LemonPOS are both great open source POS solutions that have commercial support available. Also, Xymon can be used to monitor windows and/or linux service or executables, notify on downtime and restart or perform other scripted operations.

physical organisation is OK, but it is not enough
I works as an electronic engineer and I have a lot of parts I use for my different projects. When I start a new project, I have to use the same components, where it is necessary to have a database. I already used the phpinventory : http://www.phpwares.com/ And if you need something better, there is openbravo http://www.openbravo.com/ which is a real ERP ( based on Compiere ) which I plan to use for my new company. But as said before by someone else, it takes a lot of time and discipline to maintain such database, but it is very powerfull. If you create pcb, EAGLE ( http://www.cadsoftusa.com/ ) you can use a database when you create BOM and the software populate directly the BOM with the good components, which help you to keep your standard components.

The only program for most businesses that's missing is a full featured and multi-user accounting package like Quickbooks.
Have you seen Openbravo? It has pretty full featured ERP and POS packages, and is written in nice cross-platform Java.

Save Your Money, Use Open Source POS
I've worked on many kinds of POS systems (still install and train) and they all do basically the same thing; the only difference between them are the specific business needs and the quality of their service.
If you need to save some $$$, instead of thousands of dollars on some of these POS solutions that I deal with, you could try OpenBravo POS.

It looks very good and is open source, so you can tailor it to your needs. You can use the data in any way you see fit. It will run under any OS (Java Based). See the "Technology" section for more details about what you can export so you can use OpenOffice.
It supports a wide range of hardware; this makes it easy for businesses to save money on start up cost and overhead, you only get what you need.

http://demo.openbravo.com/ OpenBravo is the only one I've seen that looks promising. Compiere was incredibly difficult to setup, I never actually succeeded. Try the demo link above. Don't even think about using Sage products. They are TERRIBLE! I speak from experience here. They were written using 20 year old "Business BASIC" language.
