We Are Star-Stuff
I wonder how many tons of stars it takes to make prehistoric vegetation? If we could figure out how many stars need to nova to make a ton of raw materials for plants (carbon, nitrogen, oxygen, etc.) then we could show how inefficient cars REALLY are. Wow!

Now that the obvious joke is out of me, here are some more serious ideas....
one poster mentioend why not getting them outside and do something physical. With that in mind, you can look here at yes mag. Yes Mag is a good science and engineering magazine aimed at children around your cousins age. The website has links to articles, sites and some good from hands on science/engineering activities.
Another site I used heavily this past summer at the computer/tech camp I worked at was Space Kids
Actually looking at the national organzation, actua, that ran the camp I've worked at just now, they also have a list of project and links you can do here: Actua Projects
If you want to teach them something about programming, I've been looking around for Logo I believe this site has some good tutorial movies on how to use the program.
There also always the Bill Nye, Beakmen's of the world too which may be good starting grounds. -
Re:no mentionThe US calls the shots when it comes to the ISS, and the limited role the Europeans play is because the US is miffed at European foreign policy and thinks that European engineers are dolts (see here).
If you want to know what parts of the ISS the US has assigned to other nations, you can find it on Google (e.g., this and this). Ariane rocket launches also are used for a lot of components, although US media don't seem to have much interest in reporting this (e.g., here).
The main reason for NASA to favor international involvement in something like the ISS is because it makes it harder for Congress to cancel the project; otherwise, it looks like they'd just as soon go it alone.

EARTHKAM
Another project going on (for the last time) is Earthkam (on space.com), Digital camera in the shuttle, schools take pictures. Not quite as cool as the radar imagery, but still really cool.
