A few years ago I had a Psion 5MX (being the only PDA which could replace a computer - IMHO) it had version 5 of what is now the Symbian OS (v6 or 7). I tried out tonnes of software on it including writing my own and in 18 months of operation (install, uninstall, hrs of use per day) it reset once. I don't think cell phone stability will be a problem for the Symbian licencees.
I'd strongly suggest looking into LabVIEW (www.ni.com/labview). Productivity is listed as 10 times better than C and it runs on Windows & Linux (& Solaris?) - same source code with a recompile.
I've been doing this graphical dataflow programming for a few years and there really isn't anything like it.
