The only place I can see needing to know the address is when plugging it into a server to get a static address (DHCP is very bad for servers for numerous reasons), and also plugging it into the router to pipe ports to servers. But in both of those places, copy and paste works great!

It doesn't matter how many hosts files you use. You would have to edit the hosts file on the destination mail server, which by definition isn't your mail server.

How is anyone absolutely sure that an update you push out to your hosts file isn't going to compromise their machine?

I don't care what mythical scenario you come up with, hosts will never get you past DNSBL.
