The newest, well sorta, vesion of Mac OS X is 4K17, it's the version used at Macworld Expo recently. Slightly older is 2E14 but no big changes have been made since that upgrade so it doesn't matter.
What does matter is that neither of these version have any support for older motherboards. Not a single person has been able to install Mac OS X (2E14 or 4k17) on a Mac older than the Beige G3. So if Apple doesn't even bother to make support for older Macs with G3/G4 upgrade cards. 7500-9500 can't install because the installers says it doesn't have drivers, older systems just can't install. And newer Macs like the 9600 can't even boot in Mac OS X.
So, Apple will probably start buiding drivers after 1.0. That'll take some time (we all know how Apple is) and after that x86 drivers MIGHT come. I don't know, but if they decide to do that, it won't be for some time...
Well, games are probably the reason why you keep a Windows partition but all the games you just said have already been ported to Mac:) And much more of coure so wouldn't it be easier to just get a Mac? PS: Don't mind me I'm just being a Mac evangelist again like I usually do...:) Adios
