First, while key google apps are necessary for android, there is a long tail of google apps that are crapware. Second, I don't know anyone that uses CM cuz I use an iPhone and so so all my friends / family.
it's important to note - for iphones, the app only works if the phone is jailbroken and if you have physical possession of the device and if you have the device/icloud password. also there's no jailbreak currently available for iOS 8, and considering that iOS 8 is on over half of iOS devices, you'll quite easily be SOL.
also worth noting that not only this tool but all of the NSA type tools we've learned about require the iOS to be jailbroken first. A good argument for not jailbreaking in my book.
Verizon used to remove the E-Mail application from the Motorola Razr V3 phone and charge you $10/mo for a subscription to the E-Mail Application. On the other hand, Linux being a free hobbyist OS means that researchers have the ability to scan the code and discover these types of holes. Something that is impossible for closed systems.

I think it's better for a phone to run the version of android that offers the best user experience. Maybe a cheaper phone is best off with a lightweight android installation. The market should get to choose.

You're mistaken - it's quite easy to banish apples stock apps to a folder and put them elsewhere.
