I doubt that cross-platform (Mac and Windows anyway) is a top concern for Ximian. So either do it yourself (the source is there) or pay Ximian to do it.
AFAIK most people only use Outlook to talk to exchange to use the calender features (and whatever else). So unless Evolution can talk to exchange its not gonna help much getting rid of Windows.

I would really love to run OSX, but even second hand a G3 400MHz Mac is gonna cost £600+ (UK pounds). So it's hard to justify buying one.
