Foget linux, go for http://openbsd.org/ It has the best man pages and documentation I've seen. OpenBSD man pages have even helped me out of linux issues...
The question is how do you connect to the device "before, during, and after OS configuration." ssh and rdp are great while the server is running, but what about bios access? Personally I like serial consoles, but you can't do that with windows servers.
I've used gentoo before. The compile from source, while fun, was a real time waster for me. I see now there are binary packages. How often do they get updated? How are they compiled? Can I install and use binary packages all the time?
