A GUI takes up more resources than the whole of the server in almost any case excluding a Slashdotting or a 'lightweight'-style GUI(along the lines of twm but minus X--Windows severely lacks this). Without a GUI a small server(we're not talking Google here) can be decently run from a fracking 486. It can save you thousands of dollars on performance.
