The most useful purpose for a stereo mix in a live setting is for feedback avoidance. If a performer steps in front of a stack to interact with the crowd, the engineer can pan his instrument to the opposite stack to avoid feedback.
And that's about it.
The vast majority of the audience isn't in a position to listen to a stereo mix.
