Take a reasonably sized image and change a pixel and it's difficult to notice a change. Take a sound and make the smallest of change and it's far more evident to the listener.
The big problem is that if the watermark isn't evident to the listener, then a good mp3 encoder should remove that right away since it will improve the compression rate without effecting the user experience!
