I believe this is limiting God quite a bit. Take this scenario.
Imagine Bob, a brilliant programmer. Jack of all trades. Indeed, master of all trades. One day, Bob gets the idea to create an elaborate virtual world across hundreds of servers (Bob is very rich). This virtual world will have its own set of scientific laws. The world will be inhabited by a race of "artificially" intelligent beings.
Over many years, Bob finishes his creation! He brings into existance the first beings, and they reproduce, and their offspring reproduce. In no time, an entire race is living in Bob's Virtual World (tm).
Imagine the power at Bob's fingertips. By tweaking a database, he cures the sick. At the press of a button, the sun blackens, leaving the world in shadow. He knows the future, and he can alter the past. Bob is all-powerful, as far as his virtual world is concerned. He can do anything.
Compare this to God. God created the world, indeed all of existance as we know it. He can do anything, because he exists outside of our realm of understanding, yet within every aspect of what we consider "real."
This is the power of God.

First, in regards to your question on googling every word to make sure it's spelled right...yes. I did that with the word "consistent" in my post:)
Evidently there would be some sort of evidence or past legacy of this civilisation. A gigantic, worldwide flood is not going to destroy an exploration vessel (made of a strong material at least.. a civilisation able to genetically engineer their own crazy creatures would at least posses such materials) at the bottom of the Atlantic ocean.
Indeed, you would think there would be some sort of evidence, but as far as I know, the ocean surface is very irregular and effectively unexplored/unrecorded. If you imagine a world-wide flood capable of converting most organic matter into oil/coal (or at least burying it so it turned into oil down the road), I think most traces of the civilization would also be buried.
Of course, if you take the Bible literally, and God did flood the earth...perhaps He didn't want there to be traces of the civilization left behind? I can think of a few reasons why...
Hah, actually I wondered why they would do it in the first place also, but it could have always ended up like Jurassic Park. Experiment gone wrong?
The idea you suggested also crossed my mind (using the animals for work). Another situation is if genetic experimentation developed faster than other technologies in their civilization. Then they could have been used for all kinds of things, possibly including transportation.
Of course, the idea of playing with genes without the use of computers doesn't make too much sense, but then again...it's just a theory;)
I have a really strange theory on dinosaurs, if anyone wants to hear it.
First, I'm a Christian, and I believe everything in the Bible. So, yes, I believe Adam lived 930 years, and everyone else who lived in the environment before the flood lived around the same lifespan.
How far has civilization advanced in the last 2,000 years? We have cars, computers, and automatic washers, just to name a few of our technologies. The civilization before the flood in Genesis also had about 2,000 years to develop, and people lived over 10 times as long as we do now. So, I theorize that the civilization before the flood was advanced beyond ours today.
Given that, and the fact that we're just now getting into playing with genes/cloning, it's my theory that dinosaurs were actually genetic experiments of the antediluvial civilization. To back this up with scripture, notice that the Bible says some of all of God's creations came to Noah, and he took them on the ark. Dinosaurs were not God's creations, and all died in the flood. Even non-Christians will agree that dinosaurs ceased to exist all at once, and that idea is consistent with my theory.
