Understand that theory is not the same as practice. If all you wanted was practice, there are schools for it. Said schools are usually crap though.
You learn to program by reading and understanding code. By understanding code written by someone else, you gain insight as to how a project should be structured and what tools you will need.
An example, although a poor one, is the internship I landed about six months ago. I've been doing web development work using.NET for about three months now and I came into it from a C++ background. I essentially learned the quirks of C# by reading example code, some company code that was confirmed functional, and generally brute mental force. Amazingly, the past semester I took a C# class that taught me nothing. I already knew how to write the code discussed because they had already taught me the way to learn new computer languages effectively.
Now, you're talking about new techniques and cool whiz-bang projects. That's not what they should be teaching in CS classes. That should be pursued due to an interest by the student. If you can't do that, and want all the CoOl L337 H4x0R stuff spoon fed to you, look up IADT. I'm sure they have a college program for you.
(Disclaimer: I'm an unsatisfied IADT graduate that went to a four-year college after being unable to find a job with that awful degree. Take that as you will.)
