Re:Pocket PC Compatability
I like to use EssentialPIM on the desktop. The non free version includes PocketPC connectivity. There is even a "portable" version for thumb drives.

A tidied up version
I suggest you consider encrypting part of the drive, TrueCrypt is a great little app and will run from the USB Thumb Drive as a way to store any info you wish to be secure.
You might also want to consider EssentialPIM or Getting Things Done tools like GTDTiddlyWiki or Next Action (requires firefox)
Check out portablefreeware for more apps and Slashdot
Microsoft usb flash manager is a way to backup you flash drive and keep the info safe, you might also want to consider a second flash drive

EssentialPIM
I use a little guy called EssentialPIM. http://www.essentialpim.com/ Its a free product, is very small, but only works on windows and isnt open source. Works really well for me.

Too heavy
i've found sunbird too heavy for my needs: Thunderbird is already eatin 50MB of my memory and i dont want Sunbird to do the same so I'm currently using EssentialPIM a small (1MB) and free PIM for Windows and it's quite ok for small todos and appointments. I think that Evolution could be the right solution on Linux, but i've not tried it too much...
