You can call POTS phones with any SIP client. I generally use the one built in to my mobile phone in preference to using the mobile network. You just need a company that handles the bridging. I use sipgate, who seem to offer good value in the UK, but there are a lot and there's nothing stopping you from using a different one for every country you call, unlike Skype where you have a single supplier for POTS bridging.

Nokia E60 - WiFi + SIP
I've been using VOIP (SIP) at home for a few years now. From the UK I call my girlfriend on her landline in the USA for almost nothing.
I've used lots of different phones and adapters. I don't generally use any "softphones" (VOIP applications that require a PC), nor any of the phones that require your PC to be on.
The absolute best voice quality, and ease-of-use is the Nokia E60 I recently bought. It was about US$300 from eBay (SIM free - i.e. generic, not locked to any network). It's standards-compliant (802.11 + SIP) and connects to both of my current VOIP providers (Sipgate and VoipBuster) without trouble.
Whenever I get home (within range of my access point) it instantly registers with my VOIP provider of choice as well as staying connected to the cell network via 3G/GSM. Whenever I click a contact to make a call it simply asks whether I want to call by "Cell" or "Internet" - and that decides how the call is routed. Incoming calls on SIP and cell work great - so you can have more than one number on your phone at the same time.
The voice quality is superb and it is so totally easy-to-use once configured (configuration is slow when you have to type all the server names on a numeric pad). The only downsides are that I only get about 2 hours of talk time over WiFi (after that I have to plug in the charger to keep talking), and that there is no built-in camera.

http://www.sipgate.co.uk/ offers a free local number in the UK (and other countries i believe) when you sign up.
http://www.gizmoproject.com/ has a nice softphone application which, from looking at the Mac OS X 2.0 test version, will soon allow you to set it up for 3rd party SIP services. There are other softphone apps out there, but Gizmo's is the nicest cross-platform one IMO. -
The cheapest VoIP provider, is the least known!I wouldn't bother with skype if you actually want to use VoIP as an alternative to a conventional phone as it's way too expensive.

Sipgate allocate UK geographical numbers to their users accounts free of charge, with the added bonus that you can you can choose any national code, it doesn't matter where you live as long as you live in the UK.
Voipbuster offer free calls to PSTN lines at these destinations.

The call quality is excellent and relability is good as long as you don't use the voipbuster software although admitedly I have had some problems with Voipbuster.
For software you're better off using either x-ten or firefly which are available elsewhere on the net. Configeration is fairly straightforward
As you can see with so many destinations available as a free call, there's little point in using propriatory skype unless you value the instant messaging capabilities. Unfortunately it seems http://www.tribeworks.com/home/vibe.asp google may want to buy skype. Personally I think this is a shame because a propriatry protocol will become more popular even though there are decent open alternatives. It will be interesting what google will charge for calls
I've gone slightly overboard and invested in a http://www.sipura.com/products/spa2000.htm sipura spa 2000. It set me back about £40, has two phone lines and if you combine this with a dect phone you create a wireless SIPphone for the house. Given the price and the fact you normally need a phoneline in the firstplace, I just bought it as abit of a toy for now. By using Sipgate I can go anywhere in the world and keep the same local number which is quite cool.
You can pick up other adapters fairly cheaply but you might have to make do with a single phoneline.

Sipgate
I'm using the VoIP provider Sipgate for 2 month now almost exclusively for all non-mobile fone calls. It works like a charm and is dirt cheap. With the fritz!box fon i can even use my old analog fon which really is very comfortable. It's so simple that even my mother in law uses VoIP in her home. I'm urging every i know to switch to VoIP.

If you use sipgate (http://www.sipgate.co.uk/) you can sign up for just about any area code in the UK. You can choose any area you want when it asks you for your "area code of residence" and your billing address can be somewhere else.
You can also get a free US number to forward to any SIP phone from http://www.ipkall.com/ -
Alternative UK VoIP
I have been using SIPgate since they launched in the UK. They provide (free) numbers in nearly all area codes, incoming calls are free and calls to other VoIP phones are free. You only have to spend money to pay for outgoing calls to standard phones.
