The reason it is rated "mature" is because it is deemed unsuitable for younger audiences. It is assumed that as adults, people can enjoy the game whilst realising that it is a fantasy.
No-one claimed that blood and guts were a sign of maturity, rather that maturity must be reached before a person can look at blood and guts without it affecting social development.
Also, if paying mortgages is your idea of fun, I shudder to think of your... well, I just shudder.
